Arbi Ki Sabji | Eddo Curry | अरबी की सब्जी

Ingredients

  • 1 lbs eddoes (arbi)
  • 1 tsp carom seeds (ajwain)
  • 1 tsp red chili powder
  • ½ tsp turmeric
  • ½ salt
  • oil or ghee for frying

Method

  1. Cook eddoes in pressure cooker for 6 minutes. Let cool.
  2. Rinse arbi in cold water and peel. Cut lengthwise into 4–6 pieces per eddo.
  3. Heat oil in a pan and add ajwain and turmeric. When spices spatter add arbi.
  4. Add chili powder and salt and fry eddoes over medium heat until crisp and brown.

Serve with paratha or puri.
