Karela Ki Sabji | Bitter Melon Curry | करेले की सब्जी

Ingredients

  • 3 bitter melons
  • 2 medium onions (chopped coarsely)
  • 3 tbsp frying oil
  • 1 tsp turmeric
  • 1 tsp tamarind powder
  • 1 tsp jaggery
  • ½ tsp salt

Dry Spices

  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp sugar
  • 1 tsp mango powder (aamchur)
  • ½ tsp turmeric
  • ½ tsp fennel
  • ½ tsp nigella seeds

Method

  1. Slice bitter melon lengthwise and then slice thinly.
  2. Place in 4 cups boiling water with salt and 1 tsp turmeric.
  3. Cook until tender. Remove bitter melon from water.
  4. Sauté onion on high until slightly brown.
  5. Add kerala pieces, a tsp of salt, ½ tsp turmeric and cover.
  6. Cook on low heat for 3 minutes. When tender and soft, open the lid, and cook on medium heat to brown.
  7. After the mixture has browned, add remaining dry spices Cook for 4 minutes minutes.

Serve with roti.
