Lamb Kofta

Kofta Ingredients

  • 450 g (1 lb) ground lamb
  • ½ onion (chopped coarsely)
  • 1 green chili pepper
  • 4 green cardamom pods
  • 1 ½ tsp garam masala
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp salt
  • ½ tsp red chili powder
  • ¼ cup chopped coriander leaves

Masala Ingredients

  • 1 onion (finely chopped)
  • 2 tomatoes (chopped or ¼ can of tomato puree)
  • ¼ cup full-fat yogurt
  • 1 tsp garam masala
  • 1 tsp garlic paste
  • 1 tsp ginger paste

Dry Spices

  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • ½ tsp turmeric
  • ½ tsp salt

Kofta Method

  1. Combine all ingredients (except coriander) by hand or in a food processor
  2. Then add coriander leaves and mix by hand until combined.
  3. Roll mixture into balls around 2″ in diameter.
  4. Microwave balls for 5 minutes so they stick together.

Masala Method

  1. Heat 1 tbsp vegetable oil or ghee in a saucepan over medium heat.
  2. Sauté onions until golden brown then add garlic.
  3. Sauté garlic for 1 minute and add ginger.
  4. Add dry spices and stir.
  5. Add ¼ cup water and stir until masala and leaves the oil.
  6. Add tomatoes and cook for 5 minutes. If masala sticks to the bottom of the pan, add more oil or ghee.
  7. Add meatballs to masala.
  8. Stir in yogurt and cook for 5 minutes until yogurt is combined.
  9. Finally add cups of water, cover, and let simmer for 10 minutes.

Serve with roti or rice.
