Lauki Kofta | Bottle Squash Kofta | लौकी के कोफ्ते

Kofta Ingredients

  • 1 large bottle squash
  • ¾ cups gram flour
  • 2 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp garam masala
  • ¾ tsp salt
  • ½ tsp chili powder

Curry Sauce Ingredients

  • 1 medium onion (minced)
  • ½ cup tomatoes (diced)
  • 1 ½ tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • 3 tbsp vegetable oil
  • Coriander leaves for garnish

Kofta Method

  1. Peel and grate bottle squash. Squeeze squash to remove as much water as possible.
  2. In a large bowl, mix together all the ingredients except gram flour.
  3. In a non-stick pan, roast gram flour until light brown. Approximately 2 minutes.
  4. Add roasted gram flour to the bowl. Mix well.
  5. Form the mixture into balls smaller than a ping-pong ball.
  6. Deep fry kofta at medium heat. Fry until golden brown.
  7. Set aside kofta while you prepare the curry sauce.

Curry Method

  1. Heat vegetable oil in a pan at medium heat. Fry onion until golden brown.
  2. Add ginger, garlic paste, coriander, turmeric, and chili powder. Let cook for 2 minutes.
  3. Add ½ cup water to help the mixture cook.
  4. Add tomatoes. Continue to stir until the masala releases the oil.
  5. When the mixture is brown that means the masala is ready.
  6. Add another cup of water and bring mixture to a boil.
  7. Reduce heat to low and let simmer for 3 more minutes.
  8. Add prepared kofta balls to gravy.
  9. Sprinkle garam masala on top, cover, and turn off heat. Let kofta soak for 5 minutes.

Garnish with chopped coriander leaves. Serve with rice or roti.
