Mathri | मठरी


  • 3 cup white flour (maida)
  • 1 cup semolina flour (sooji)
  • 1 cup vegetable oil
  • 1 tsp carom seeds (ajwain)
  • 1 tsp black pepper (coarsely ground)
  • 2 tsp salt
  • 1 ½ cup water
  • Oil for frying


  1. In a large bowl, combine all ingredients except oil and water.
  2. Add oil and knead with hands until well-mixed.
  3. Add water a few spoonfuls at a time and knead until it forms a dough.
  4. Divide dough in eight pieces.
  5. Roll each piece in a long sausage-shaped roll.
  6. Cut rolls in half-inch pieces and then roll each piece into a ball.
  7. Deep fry in batches until each piece is light brown.

Serve with tea.
